Great weddings don’t just happen – but they sure do when you pull an amazing team of people together. Collaboration is key!
Tent weddings can be absolutely magical. We are so excited when we are asked to be part of an event team that creates such an amazing and beautiful experience for a wedding couple, their families, and their guests. We were asked to be the caterer for a wedding in July that was going to be held just west of Calgary in the Springbank area. The home and the land surrounding it were stunning with beautiful views of the mountains.
The planner behind this wedding was the creative and lovely Shannon Valente of Shannon Valente Weddings. The stunning property was transformed into a perfect venue for a summer wedding reception with beautiful lighting, luxurious flowers, crisp white tents and even an antique barnboard lemonade stand created just for the reception.
It is all of the personal touches at a wedding reception that makes everyone’s heart sing.
The weather was perfect for guests to enjoy the garden and lemonade stand during the cocktail hour before dinner. Hors d’oeuvres were served in the garden and when guests were seated in the dining tent they were served a fresh twist on a Greek salad (the groom’s favourite) with baby kale. The main course was a selection of entrees that guests could choose from – not an easy decision! Following dinner, a light dessert of mini cupcakes (the bride’s favourite) were served to each table. But this was not the end of the food! Late night platters and a sweets bar came out later in the evening to keep the dancing going until the wee hours.

Mini pear and gorgonzola pizzas with fresh pesto (v)
Roasted scallop with tomato jam and crispy prosciutto (gf)
Grilled vegetable salad roll with balsamic reduction (gf, v)
Parmesan cannoli with herbed Boursin mousse (gf, v)
Bruschetta, olives, balsamic and olive oil (gf, v)
Served with crostini, grissini and focaccia
Greek style salad with baby kale and fresh basil vinaigrette (gf,v)
Peppered Alberta beef tenderloin with Chianti demi glaze (gf)
Tomato and ricotta stuffed chicken supreme (gf)
Grilled vegetable stacks with goat cheese and balsamic reduction (gf, v)
Buttermilk smashed yams and potatoes (gf)
Grilled summer vegetables (gf, v)
Devour will serve a platter of assorted mini cupcakes to each table at the end of dinner
Tapas and antipasti platters with fresh and pickled vegetables, buns, aioli, cheeses and toppings
Served with house made chips and dips
Sparkling blackcurrant punch
Green tea lychee lemonade
Peach iced tea
