Green Goddess Dressing

To celebrate the first day of Spring – we thought we would share one of our favourite dressings….and hoping that if enough of us make it this week…maybe the snow will melt?

Created in 1923 at the Palace Hotel in San Francisco, this lively green dressing was created in honour of a stage production of the same name.  The simple blend of mayonnaise, fresh green herbs and anchovies has become a staple in North America (think of it as a green Ranch dressing).

This dressing is SO versatile (aren’t all goddesses after all?)  Whether it is coating cool spinach leaves or tender butter lettuce or alongside grilled chicken or pork – it is always a hit.  Again…just like a goddess should be!

  1. In a food processor or blender, add cilantro, parsley, chives, garlic, and lemon juice. Blend until a thick paste forms. Pulse in remaining ingredients and blend until full combined and pastel green in colour.
  2. Store in the refrigerator and jump for joy!

¼ cup fresh cilantro leaves
¼ cup fresh parsley leaves
¼ cup fresh chives, roughly chopped
5 anchovy fillets
1 garlic clove, minced
Juice of 1 lemon (about ¼ cup)
⅔ cup mayonnaise
⅔ cup sour cream
¼ teaspoon ground black pepper
1/8 tsp salt
